How to Make Garlic Scape Butter
If you’re growing hardneck garlic in your garden this year, you are probably swimming in scapes. It’s also the time where you can purchase garlic scapes at your local farmers market, and if you’re wondering what you can do with them, I’ve got a great recipe for you — take your garlic scapes, chop them up and add them to butter! This is an incredibly easy recipe to make, and you can use your favourite butter (or make your own if you’d prefer!). Plus you can add homegrown herbs like mint, chives, sage and even chive blossoms to the butters!
I love to use this butter on toast to spruce up the typical bread & butter combination, and even in cooking as a replacement for regular butter to add a little garlicky flavour. This recipe can easily be doubled, or halved, depending on how much you need or want as well!
Ingredients:
½ cup butter of your choice, room temperature (to make it easier to mix!)
½ cup garlic scapes
Optional: ¼ cup chives & chive blossoms to make a chive & garlic scape butter
Directions:
Put all ingredients into a bowl, and mix until well combined.
Put it on parchment paper and roll into a log shape
Store in the fridge or freeze for up to 6 months
