Berry Beet Smoothie


It’s back to school season! Can you believe it? Some of you have already sent your kiddos back to school, but there’s a few of us who are still counting down the days to next week (myself included!). If you’re finding yourself on the hunt for a delicious, nutritious and easy breakfast (or snack) to make for yourself and your kids in the morning, look no further than this berry beet smoothie that I created in collaboration with Ali from The Toddler Kitchen!

This smoothie is not only packed with tons of great nutritious foods including strawberries, blackberries, bananas and more, but it’s beautiful too! The beets add the most incredible pop of pink, making it super fun for the kids to enjoy. The bananas & berries add a great natural sweetness that helps to balance out the more earthy flavours from the beets! Plus, you can easily customize this smoothie recipe to make it plant-based if that’s your preferred diet. This recipe makes 2 small servings, or 1 large serving, so feel free to double up if needed!

Ingredients

  • 1 small beet, washed, peeled, and roughly chopped

  • 1 cup strawberries, frozen

  • ½ cup blackberries, fresh or frozen

  • 1 medium banana

  • 1 cup vanilla Greek yogurt 

  • 1 cup milk of choice (plus more as needed)

  • 1 tablespoon chia seeds

Directions

  1. Wash, peel, and roughly chop the beet. 

  2. Add the beet and remaining ingredients to a high-powered blender. (I love my Foodi Glass Pitcher that goes with my Ninja Blender so it’s plastic-free & high-powered!)

  3. Blend on high until completely smooth and creamy, stopping to scrape down the sides of the blender as needed.

  4. Add an extra splash of milk if you prefer a thinner smoothie.

  5. Pour into glasses and enjoy right away.

Nutrition Facts: Approximately 287 calories, 14 g of protein, 8 g of fibre, and 2.6 mg of iron per serving.

Quick Tips:

  • Using a blender that is stronger works best for blending raw beet smoothly. Whether you have a strong blender or not, it’s still best to cut the beet into small pieces before blending.

  • If you’re looking to make this smoothie a little less sweet., swap the vanilla Greek yogurt for plain Greek yogurt instead. If you want to add more sweetness, add a little honey or maple syrup to taste.

  • Please note: the chia seeds will continue to absorb liquid and thicken the smoothie as it sits.

While this smoothie is best to be made and enjoyed straight away, you can still prep this ahead of time to make your mornings a little simpler. Add your cut up the beet, strawberries, blackberries, banana, and chia seeds to a freezer-safe bag, and freeze until you’re ready to make it. When you’re ready to make it, pop the frozen ingredients to your blender along with the milk and Greek yogurt, then blend until smooth. Note: You may need to add a little extra milk to help everything blend. If you have any leftover smoothie, you can easily add them to popsicle moulds and freeze them for the kiddos to enjoy after school.
